Cauliflower Casserole

1 cup cauliflower rice
1 cup red, yellow and orange peppers
2 egg whites
Sea Salt
Chives
Frank's Hot Sauce (optional)

Preheat oven to 425 degrees. Put the egg whites in a greased casserole dish and whisk. Add cauliflower,  peppers,  sea salt, hot sauce, and chives; mix until incorporated. Then spread evenly. Bake in the oven for 15 minutes.

This is a scrumptious side dish that is very filing!  It is very healthy as well!

If you are allowed more carbs or dairy than I am,  you can add cheese to this dish. You could also add Panko bread crumbs on top!

I really love this dish. Not only because it is filling but, because it has a wonderful flavor to it. It tastes earthy and light. I love the hot sauce because I love spicy food!

Enjoy,
Susan
